Do you have a recipe for a light chili that doesn't have tomato or chili powder?A: I know most of us think a chili powder-and-tomato-free chili is an urban legend, but it really does exist. I made light versions of a couple of different white chili recipes, and this one is by far the best. If anyone suffering from heartburn also tends to have pepper as a trigger, just delete or reduce the lemon pepper in the recipe.To keep this recipe light, we are using skinless chicken breasts and only a couple of teaspoons of canola oil to sauté the onion, and a small handful of reduced-fat tortilla chips and a sprinkle of shredded cheese to garnish each bowl.—————
  • JESSIE'S WHITE CHILI13 (1 cup) servingsOriginal recipe contains about 530 calories, 22 grams fat (7 grams saturated) and 67 milligrams cholesterol per serving.4 cups chicken broth (the best-tasting you can find)
  • 1 teaspoon lemon pepper
  • 1 teaspoon cumin seed
  • 4 skinless, boneless chicken breast halves
  • 2 teaspoons canola or olive oil
  • 2 teaspoons minced garlic
  • 1 1/4 cups chopped sweet or mild onion
  • 16 ounces frozen white corn, lightly thawed
  • 1 (7-ounce) can diced green chiles, undrained
  • 1 cup finely diced red (or orange) bell pepper,
  •  optional1/2 teaspoon ground cumin
  • 3 tablespoons lime juice
  • 2 (15-ounce) cans cannellini beans (white kidney) or any other white beans, drained and rinsed6 ounces reduced fat tortilla chipsAbout
  •  1 cup (4 ounces) shredded Monterey Jack cheese (regular or reduced fat)
  • Combine broth, lemon pepper and cumin seed in a large saucepan and bring to a boil. Add chicken and reduce heat to low
  • . Cover and simmer for 20-30 minutes or until chicken is cooked through.
  • Cut chicken into 1-inch pieces and add back to broth. Meanwhile, in a medium nonstick skillet, heat oil over medium heat.
  •  Add garlic and onion and sauté until tender (about 5 minutes).
  •  Add onion mixture to chicken and broth in saucepan. Stir in corn, chiles, bell pepper, ground cumin, lime juice and beans and bring to a boil. Let cook at a gentle boil until the beans are nice and hot (about 3-5 minutes).

Salt Consumption linked to Heartburn Risk
